Veggie Frittatas
Servings: 4
Ingredients:
4 eggs
¼ cup bell pepper, diced
2 tbsp onion, diced
¼ cup Mexican blend cheese (or mozzarella)
½ cup spinach
Seasonings of choice (salt, pepper, chili powder, onion powder)
Directions:
Preheat oven to 375F.
In a large mixing bowl, add all of your ingredients and mix
Pour into mini muffin pans and bake for 15-20 mins
Remove from pan, allow to cool and enjoy!
