Salmon Cobb Salad

Ingredients:

Dressing:

  • 3 tbsp red wine vinegar 

  • 1 tbsp avocado oil 

  • 1 tbsp Dijon mustard 

  • 1/4 tsp salt

  • 1/4 tsp pepper 

Assembly: 

  • 2 cups romaine lettuce, chopped 

  • 1/2 avocado sliced 

  • 1/4 cup cherry tomatoes, halved 

  • 3-4 strips bacon, chopped (regular or turkey)

  • 3 boiled eggs 

  • 2 Persian cucumbers, sliced 

  • 1 large salmon filet, pan fried with salt and pepper

Directions:

    1.    Assemble your salad.

    2.    Make your dressing in a blender or whisk in a large mixing bowl 

    3.    Add your dressing on top of your salad and enjoy!
