The Fastest Low Carb Chicken Parmesan

Ingredients:
3 chicken breasts, butterflied
Breading:
2 scoop protein powder
½ cup grated parmesan cheese
½ tsp salt
½ tsp pepper
½ tsp garlic powder
½ tsp onion powder
2 eggs
Assembly:
1-2 cups low sugar marinara sauce (depends on how much sauce you want)
6-8 slices mozzarella cheese
Fresh basil, sliced
Directions:
Wash and pat dry your chicken breasts. Butterfly them, cutting each breast in half. You’ll end up with 6 equal pieces.
Make your breading. In a large bowl, add your protein powder and seasonings. Set aside.
In another large bowl, crack two eggs and whisk. Set this aside and we’ll start breading and frying your chicken.
In a large saute pan, add your avocado oil. This should be about 1 inch thick. Shallow fry your chicken on both sides for about 3-4 minutes, placing them on a wire rack to cool.
Once you’re done frying, remove your oil and add your low sugar marinara sauce. Here, you can add any seasonings you’d like.
Once your sauce comes to a boil, simmer and add back your fried chicken.
Top with mozzarella cheese and cover with your lid for 1-2 minutes until your cheese is nice and melty.
Top with basil and enjoy!
