Asian Inspired Meal Prep

 
 

Servings: 4

Ingredients:

  • 1 lb ground turkey

  • Salt and pepper to taste

  • 1 tsp sesame oil

  • 1 tbsp Choczero sugar free honey 

  • 2 tbsp coconut aminos 

  • 1 tbsp sriracha or crushed red pepper 

  • 1 tsp garlic powder

  • ½ tsp ground ginger 

  • 1 tbsp sesame seeds 

  • 1 cup diced mushrooms 

  • 1 large zucchini, diced  

  • ½ cup strips red bell peppers 

  • 1 cup broccoli florets 

  • 1 cup cauliflower florets

  • 2 10-oz bags cauliflower rice 

Directions:

  1. In a large skillet over medium heat, add about a tbsp of avocado oil. Add your ground turkey and season with salt, pepper, garlic powder, and ground ginger. Stir and cook until halfway done.

  2. Add your mushrooms, zucchini, sesame oil, coconut aminos, sriracha and cook until fully cooked through. Add your honey at the end along with sesame seeds and mix. 

  3. In a separate pan, cook your cauliflower rice until nice and fluffy. Season with salt if needed 

  4. Add your cauliflower rice into your meal prep containers and rinse & dry your pan.

  5. Using your clean pan, place this on medium high heat and you’ll cook your veggies. Add about 1 tbsp avocado oil and add your cauliflower, broccoli and bell pepper. Season with salt and pepper and saute until cooked through or desired consistency.

  6. Place your rice, turkey and veggies in your meal prep container and enjoy!
