Buffalo Chicken Salad

Ingredients:
Chicken -
1 cup unflavored protein powder
2 lbs chicken tenderloins
Salt and pepper to taste
½ tsp paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp italian seasoning
2 eggs
½ cup buffalo sauce
Salad -
4 cups shredded romaine lettuce
2 celery stalks
½ cup cheddar cheese
¼ cup blue cheese crumbles
Dressing -
My homemade ranch dressing
Directions:
Start by creating your chicken tender breading.
In a large bowl, add your protein powder and seasonings. Mix
In another large bowl, crack your two eggs and whisk. Salt and pepper your eggs.
In a shallow pan, add your avocado oil. I added about ¼ cup because I’m shallow frying.
Bread your chicken, first in your egg, then to your protein powder breading.
Turn your heat on medium high and shallow fry your chicken tenders for 3-4 minutes on each side.
Remove from the pan and allow them to cool on a paper towel-lined plate or cookie rack.
Assemble your salad - romaine lettuce, celery, cheddar cheese, bleu cheese and your chicken.
Add my homemade ranch dressing, or your dressing of choice.
