Low Carb Totino's Pizza Rolls Copycat

 
 

Servings: 4

Ingredients:

Dough: 

  • 1 ¼ cup mozzarella cheese 

  • ½ cup almond flour 

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • ½ teaspoon italian seasoning

  • 1 teaspoon baking powder

  • ½ teaspoon xanthan gum 

  • 1 egg

Filling:

  • 1 cup pizza sauce 

  • 1 package pepperoni (use as much as you’d like - I’m using about 15-20)

  • 1 cup mozzarella cheese

  • Crushed red pepper 

Egg Wash: 

  • 1 egg 

  • 1 tbsp water 

Directions:

  1. Preheat your oven to 350F

  2. Prepare a cookie sheet with parchment paper

  3. In a large bowl, melt the cheese by microwaving in 30 second increments.  

  4. Once melted add your superfine almond flour, baking powder, xanthan, and egg. 

  5. Knead until well combined 

  6. Roll out dough to about ¼ inch thick and cut into rectangles. 

  7. Add your pizza sauce and fillings on one side, fold over and seal with a fork.

  8. You can make slits at the top to allow the air to 

  9. Brush too with melted butter or egg wash.

  10. Bake for 15 to 20 minutes or until done depending on filling
