Wendy’s Spicy Chicken Nuggets Copycat

Ingredients:

Chicken Nugget Mixture: 

  • 1 lb ground chicken breast 

  • 1 egg 

  • 1 tsp onion powder 

  • 1 tsp garlic powder 

  • 1 tsp salt 

  • Pepper to taste 

Breading:

  • 1 cup almond flour 

  • ¼ cup grated parmesan cheese

  • 1 tsp cayenne pepper (2 tsp for more spice)

  • 2 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp salt 

  • Salt and pepper to taste 

  • Optional - 1 tsp sweetener

Directions: 

  1. In a large bowl, make your chicken nugget mixture. You’ll want to mix this thoroughly so your nuggets are evenly coated. 

  2. Portion your chicken nuggets into bite sized pieces. You can shape them into 2” in wide nuggets.

  3. Now, make your breading by adding your almond flour, parmesan cheese and all seasonings.

  4. Bread each nuggets with your breading, then place on a parchment lined baking sheet.. 

  5. Shallow fry for 3-5 minutes on each side, removing each nugget and placing them on a paper towel lined plate or wire rack to cool. Dip in your favorite condiment and enjoy!
