Shrimp Peanut Buddah Bowl - 500 Calorie Dinner

Ingredients:
Peanut Sauce:
1 tbsp sesame oil
2 tbsp Choczero sugar free maple syrup or sugar free honey
1/2 cup creamy peanut butter
¼ cup coconut aminos
2 tbsp white vinegar
2 tbsp sriracha
2-3 tbsp water (to thin out for consistency)
Bowl:
1 cup chicken breast, cooked
½ cup edamame beans
½ cup roasted or steamed broccoli
½ cup carrots, shredded
1 tsp sesame seeds
¼ cup roasted cashews
Fried egg
1 tbsp green onion
1 tbsp cilantro
Sriracha to top

Directions:
Make your cauliflower rice, following my recipe.
Season your chicken breast with salt and pepper. You can keep this simple because the main star will be in the sauce.
Throw your chicken breast in the airfryer at 400F for 10 mins. I butterflied my chicken breast, so it will cook a lot faster.
While your chicken is cooking in the airfryer, make your peanut sauce.
In a large mixing bowl, add all of your ingredients and mix until combined. If your sauce is a little thicker than usual, you can add water as desired.
Assemble your bowl with your cauliflower rice at the bottom, and place your toppings around your bowl - roasted or steamed broccoli, carrots, edamame, cashews, green onion, cilantro and fried egg.
Top with sesame seeds and cilantro and enjoy!
