Mediterranean Chicken Bowl

Ingredients:
Mediterranean Chicken:
2 chicken breasts
½ red bell pepper, sliced
½ yellow bell pepper, sliced
½ purple onion, sliced
½ zucchini, cut in half moons
1 tsp onion powder
1 tsp garlic powder
1 tsp dried dill
1 tsp salt
1 tsp pepper
Mediterranean Pico de Gallo:
1 tomato, finely diced
1 red onion, finely diced
1 cucumber, finely diced
½ tsp garlic powder
½ tsp dried dill
1-2 tbsp lemon juice
1 tbsp avocado oil
Cauliflower Rice:
2 bags frozen cauli rice
Salt and pepper to taste
1 tbsp avocado oil
Toppings:
¼ cup feta cheese
2 tbsp tzatziki sauce
Directions:
Add all of the Mediterranean chicken ingredients into the airfryer and spray with avocado oil.
Give it a toss and airfry at 400F for 15-20 minutes.
While the chicken and veggies are cooking, start making the Mediterranean pico de gallo.
Add all of the Mediterranean pico de gallo ingredients into a bowl, mix, and set aside.
Start on your cauliflower rice by cooking your rice according to package instructions.
Assemble your bowl by adding your cauli rice, chicken & veggies, Mediterranean pico, and toppings!
Enjoy for lunch or dinner!
