Low Carb Riceless Sushi

 
 

Servings: 2

Ingredients:

  • 1 package smoked salmon 

  • 1 english cucumber, shaved or cut into strips 

  • 2 oz cream cheese, cut into strips

  • ½ avocado, cut into slices  

  • Sesame seeds 

  • 3 large sheets seaweed nori 

Sushi “Rice”

  • 2 -10oz bags cauliflower rice 

  • 1 tsp sweetener

  • 1 tbsp rice wine vinegar

  • Salt and pepper to taste

For garnish or dipping:

  • Soy sauce

  • Pickled ginger

  • Wasabi 

Directions:

  1. Start with your sushi rice. If you’re using frozen rice, microwave and drain all of your water out. 

  2. In a medium saucepan, add about 1 tsp avocado oil and your rice. Saute until nice and fluffy. Add your salt, pepper, sweetener and rice vinegar and stir. Set aside to cool.

  3. Assemble your sushi roll. Using a sushi kit or plastic wrap, place your seaweed or nori sheet down and add all of your toppings. 

  4. Tuck and roll your sushi roll, and then cut into slices!

  5. Pair your sushi with soy sauce, wasabi and ginger and enjoy!
