Low Carb Fettucine Chicken Alfredo Pasta

Pasta

Ingredients:

  • ¼ cup almond flour

  • 2 oz cream cheese

  • 4 large eggs

  • 1 tsp xanthan gum

  • 1 tsp avocado oil

Alfredo sauce

Ingredients:

  • 2 tbsp butter 

  • 2 garlic, minced

  • Salt and pepper to taste 

  • 1 cup heavy cream

  • ½ cup almond milk

  • 1 cup parmesan cheese

  • 1 cup broccoli florets

  • 2 chicken breasts

  • Fresh parsley 

Directions:

  1. Preheat your oven to 300F In a large mixing bowl, add your pasta ingredients into a blender and mix until well combined. 

  2. Line a cookie sheet with parchment paper and spray with avocado oil. 

  3. Bake your pasta for 8-10 mins until cooked. While that’s in the oven, let’s make your sauce 

  4. In a large pan, we’re going to cook your seasoned chicken breast. You can use tenderloins as well, but mine took about 5 minutes on each side. 

  5. Remove your chicken and add in your butter.

  6. Now, add your heavy cream and almond milk. If you want this richer, you can use all heavy cream. You’ll want to simmer on low heat for 2 mins. 

  7. Add your minced garlic, salt and pepper. 

  8. Now whisk in your parmesan cheese! You can add in your broccoli at this point

  9. Remove your noodles from your oven and let cool. Cut your noodles to your desired shape and mix with your sauce!
