Low Carb Cowboy Caviar Dip

Ingredients:

Dip: 

  • ½ cup strawberries, chopped 

  • ½ cup blackberries, chopped 

  • ½ cup canned corn (optional if strict keto)

  • 1 cup black soy beans, drained and rinsed 

  • 1 jalapeño, deseeded and chopped

  • ¼ cup pickled jalapenos, chopped

  • ½ cup red bell pepper, chopped

  • ½ cup green bell pepper, chopped

  • ½ cup orange bell pepper, chopped

  • ½ cup sliced olives 

  • ½ cup cilantro, chopped

  • ½ cup cucumber, chopped

  • 1 cup crumbled feta cheese

  • 2 tbsp grated parmesan cheese

Dressing:

  • 1 lime, juiced

  • ½ lemon, juiced 

  • 2 tbsp red wine vinegar 

  • 1 tsp Mexican or taco seasoning 

  • Salt and pepper to taste

  • Tapatio to taste

  • 2 tbsp Avocado oil

  • Tajín seasoning to taste

Directions:

  1. Add everything into one bowl, toss and enjoy!
