Keto Red Velvet Mug Cake
Red Velvet has always been my favorite cake, and I'm so happy to be able to share this recipe with you today!
Ingredients:
Mug Cake Ingredients:
3 tbsp almond flour, packed (make sure you measure this packed and not loose or your cake will be too wet)
1 tbsp butter
1 tbsp sour cream
1 egg
1 ½ tbsp sweetener (I used granular monkfruit)
1 tsp cocoa powder, unless you LOVE chocolate like me, then add 2 tsp
¼ tsp red coloring optional
½ tsp baking powder
Optional: 1/2 tsp vanilla

Cream Cheese Frosting:
2 tbsp cream cheese, softened
1 tbsp butter, softened
1/4 tsp heavy cream
4-5 tsp powdered sweetener
Dash of salt
Directions:
Melt your butter in your mug and add in all of your wet ingredients (sour cream, egg, vanilla extract)
Now, mix your dry ingredients together in a bowl (cocoa powder, sweetener, baking powder, almond flour)
Add your dry ingredients into your wet ingredients in a mug. Mix thoroughly.
Add your food coloring and mix thoroughly.
Microwave for 60 seconds.
Take your cake out and let it cool completely for 5-10 minutes while you make your frosting now.
Add all frosting items into a bowl and whip until it reaches a thick whipped cream consistency.
Make sure your cake is cool, add frosting on cake and enjoy!
