Ingredients:
1 large onion cut into rings
½ cup of almond flour
½ cup of pork rinds
1 cup of grated Parmesan cheese
1 tablespoon baking powder
1 teaspoon of paprika
Salt and pepper
2 eggs beaten
1 tablespoon heavy cream
Cooking spray
Directions:
In a medium bowl, combine the almond flour, pork rinds, Parmesan cheese, baking powder, paprika, salt, and pepper.
Beat the eggs and heavy cream in another bowl.
Dip the onion rings in the eggs and then in the almond flour mixture. Press the almond flour mixture into the onions.
Transfer to a parchment lined baking sheet and repeat with the remaining onion.
Let them dry for 30 minutes
Preheat the oven to 400 degrees.
Arrange the onions in a single layer and spray with cooking spray.
Bake for 8 to 10 minutes.
Flip and respray with oil.
Bake for another 10 to 12 minutes, until crispy and brown.
