Chicken Tamale Casserole

Ingredients:
Tamale Dough:
2 oz cream cheese
2 cups of almond flour
1/2 cup of Manteca or lard
1 tbsp baking powder
¼ tsp salt
5 oz Mexican cheese
Chicken & Assembly:
1 lb rotisserie chicken
4 oz cream cheese
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp oregano
2 cups enchilada sauce or salsa
1 cup Mexican blend cheese
Green onion to top
Directions:
Preheat your oven to 375F.
Let’s start on the dough - in a microwave safe bowl add cheese and melt at 30 second intervals.
Add in all ingredients for your dough and mix well. Taste dough and adjust taste at this time. Set aside.
In a separate bowl, prep your chicken. Add your rotisserie chicken, cream cheese, seasonings, and 1 cup of your enchilada sauce or salsa. Mix until fully incorporated.
Using an 8x8 baking dish, layer your casserole - dough, chicken, enchilada sauce, cheese, dough, chicken, sauce and cheese.
Top with additional cheese and bake for 15-20 minutes until golden brown
Top with green onion and serve with your favorite salsa, sour cream, etc!
