Chicken Enchilada Skillet

 
 

Servings: 4

Ingredients:

  • 5 A La Madre low carb tortillas (discount code: lowcarblove) cut into thick strips 

  • Avocado oil (for shallow frying the tortilla strips) 

  • 2 cups rotisserie chicken, shredded 

  • 1 tbsp avocado oil

  • ½ tsp cumin 

  • ½ tsp oregano

  • ½ tsp chicken bouillon 

  • ½ tsp chili flakes 

  • 1 cup red enchilada sauce 

  • ½ cup chunky salsa

  • 2 tbsp Choczero sugar free honey

  • 1 cup Mexican blend cheese

Toppings: 

  • Sour cream 

  • Guacamole 

  • Fresh Cilantro 

Directions:

  1. Heat a small skillet over medium-high heat and add avocado oil. Shallow fry your low carb tortilla strips until they are golden brown. Set aside. 

  2. Heat a skillet over medium-high heat and add 1 tablespoon of oil.

  3. Add your shredded chicken, seasonings, enchilada sauce, salsa and mix. 

  4. Turn the heat to medium and top with cheese and cover until the cheese gets nice and melty. 

  5. Once the cheese melts, add the crunchy tortilla strips and press them in a little! 

  6. Top with guacamole, sour cream, fresh cilantro, and enjoy!
