Candied Pecans

 
 

Servings: 6

Ingredients:

  • 3 cups pecans (about 1 lb)

  • 1 1/2 cups sweetener (granulated monkfruit will work the best)

  • 3 tbsp room temp water

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

Directions:

  • Heat a large pan on medium heat. At this point, if you want, you can lightly roast your pecans for about 5 mins. If not, skip to the next step.

  • Add your granulated sweetener, water, and vanilla extract and mix until fully combined. You’ll cook this until you see your mixture starts to get brown and bubbly. This takes about 3 mins.

  • Add your pecans and cinnamon. Continue stirring occasionally, until the sweetener begins to coat the pecans evenly. 

  • Remove the pan from the stove and transfer to a lined sheet of parchment paper. Allow to cool, your pecans will harden at this point. Cool for 15-20 minutes before breaking and serving. Depending on your sweetener, your pecans may cool immediately, so you can enjoy right away.
