Southwest Chicken Salad

 
 

Servings: 2

Ingredients: 

Chicken: 

  • 2 chicken breasts

  • 1 packet taco seasoning

  • Salt and pepper to taste

Avocado Lime Dressing:  

  • 1 large ripe avocado

  • 1 lime, juiced  

  • 2 cloves garlic 

  • ¼ cup cilantro 

  • ¼ cup avocado oil

  • ½ jalapeno, deseeded 

  • 2 tbsp water (to thin out if needed)

  • Salt and pepper to taste 

Salad assembly:

  • Romaine lettuce 

  • Cherry tomatoes  

  • Red bell peppers, diced 

  • Fried tortilla strips - I use Alamadre low carb tortillas (discount code: lowcarblove)

  • Red onion, diced

  • Cucumber, diced 

  • Mexican blend cheese

Directions:  

  1. In a small bowl, add in all of your ingredients for your dressing in a small blender and blend.. Set aside.

  2. Season your chicken with your seasonings. Pan sear your chicken by adding avocado oil in a saute pan. 

  3. Cook for 5 minutes on each side, flip and cook the internal temperature reaches 165F.

  4. In a large salad bowl, assemble your salad with all of your toppings. Add your lettuce, cucumbers, tomatoes, etc. Top with your cooked chicken, add your dressing and enjoy!
