Shepherd’s Pie
Ingredients:
3 to 4 Turnips
½ cup of non dairy milk
8 Tablespoons (1 stick) butter
Salt (discount code: Lowcarblove) and pepper to taste
1 medium onion, chopped (about 1 1/2 cups)
2 zucchini
1 cup of green beans
1 1/2 lbs ground round beef
1/2 cup beef broth @kettleandfire
¼ cup of white wine
2 garlic cloves minced
½ teaspoon of thyme
½ teaspoon of rosemary
2 dried bay leaves
1 teaspoon Worcestershire sauce
Salt (discount code: Lowcarblove), pepper, other seasonings of choice
Directions:
Peel turnips and dice.
Boil until tender.
Drain turnips and return to pan to help dry them out a bit.
Add to a food processor with 3 tablespoons of butter and non dairy milk, slowly adding until desired texture is reached.
Add salt and pepper to taste.
Set aside.
Sauté vegetables.
Melt 4 tablespoons of the butter in a large sauté pan on medium heat. Add the chopped onions and cook until tender, about 6 to 10 minutes.
Add the ground beef, then Worcestershire sauce and broth.
Add vegetables.
Season with salt and pepper.
Layer the meat mixture and mashed potatoes in a casserole dish.
Preheat the oven to 400°F.
Bake in the oven for about 30 minutes.
Broil for the last few minutes to help the surface of the mashed potatoes brown.
