Keto Shepherd’s Pie

Shepherd’s Pie

Ingredients:

  • 3 to 4 Turnips

  • ½ cup of non dairy milk 

  • 8 Tablespoons (1 stick) butter

  • Salt (discount code: Lowcarblove) and pepper to taste

  • 1 medium onion, chopped (about 1 1/2 cups)

  • 2 zucchini 

  • 1 cup of green beans 

  • 1 1/2 lbs ground round beef

  • 1/2 cup beef broth @kettleandfire

  • ¼ cup of white wine 

  • 2 garlic cloves minced 

  • ½ teaspoon of thyme

  • ½ teaspoon of rosemary 

  • 2 dried bay leaves 

  • 1 teaspoon Worcestershire sauce

  • Salt (discount code: Lowcarblove), pepper, other seasonings of choice

Directions:

  1. Peel turnips and dice.

  2. Boil until tender.

  3. Drain turnips and return to pan to help dry them out a bit.

  4. Add to a food processor with 3 tablespoons of butter and non dairy milk, slowly adding until desired texture is reached. 

  5. Add salt and pepper to taste.

  6. Set aside. 

  7. Sauté vegetables.

  8. Melt 4 tablespoons of the butter in a large sauté pan on medium heat. Add the chopped onions and cook until tender, about 6 to 10 minutes.

  9. Add the ground beef, then Worcestershire sauce and broth.

  10. Add vegetables. 

  11. Season with salt and pepper.

  12. Layer the meat mixture and mashed potatoes in a casserole dish.

  13. Preheat the oven to 400°F.

  14. Bake in the oven for about 30 minutes. 

  15. Broil for the last few minutes to help the surface of the mashed potatoes brown.
