Noodleless Lasagna Soup

Ingredients:

  • 2 packets palm lasagna noodles 

  • 1 lb ground beef or turkey

  • ½ white onion, diced 

  • ½ cup diced celery 

  • 1 tsp garlic powder

  • 1 tsp onion powder 

  • 1 tsp crushed red pepper 

  • 1 tsp italian seasoning

  • Salt and pepper to taste 

  • 1 tbsp tomato paste 

  • 1 tbsp garlic paste or minced garlic 

  • 1 jar low sugar marinara 

  • 1 cup chicken broth (discount code: lowcarblove)

  • 1 cup ricotta cheese

  • 3-4 large basil leaves, sliced  

Directions:

  1. In a dutch oven or stock pot, add about 1 tbsp avocado oil and cook your ground beef or turkey until brown. Season with salt and pepper. 

  2. Add your onion and celery and add the rest of your seasonings - garlic powder, onion powder, crushed red pepper, tomato paste and garlic paste and saute until cooked through.

  3. Add your low sugar marinara and chicken broth until your soup thickens up.

  4. Add your lasagna noodles and ricotta and stir for 1-2 mins.

  5. Garnish with basil and enjoy!
