Low Carb Tiramisu

Ingredients:

Keto Vanilla Cake (Ladyfingers) -

  • 6 tbsp butter (softened)

  • 4 large eggs

  • 1/4 cup unsweetened almond milk

  • 3/4 cup granular or powdered sweetener

  • 1 tbsp vanilla bean paste or vanilla flavor

  • 1/4 cup superfine coconut flour

  • 1 1/2 cup superfine almond flour

  • 1 tbsp baking powder

My Homemade Mascarpone Whipped Cream:

  • 1 cup heavy cream or 2 cups sugar free cool whip 

  • 4 tbsp powdered allulose 

  • 1 tsp vanilla extract 

  • 8 oz mascarpone cheese 

  • Optional - rum 

  • 1 cup strong coffee or espresso 

  • 2 tbsp cocoa powder 

Directions:

  1. Preheat oven to 350 degrees

  2. In a mixing bowl, whip your butter until fluffy. Add your sweetener, and beat until combined. It should look like whipped butter at this point!

  3. Add eggs, almond milk and vanilla bean paste/flavor or extract

  4. Add in the almond flour, coconut flour, and baking powder.

  5. At this point, your batter should look nice and smooth. Add batter into pan and flatten. Bake for 20-30 minutes, until the cake comes out clean with a knife. The cake should be golden and moist.

  6. Using a toothpick, poke holes into your cake and set aside as you work on your mascarpone whipped cream

  7. In a stand mixer, add all of your ingredients except the whipped cream and whip until nice and fluffy. Fold in your whipped cream. 

  8. Once your cake is baked, remove from oven and allow to cool. At this point, you can cut them into ladyfingers or keep them as a cake

  9. Using a 8x8 pan, layer your tiramisu - cake, coffee, cream, cake, coffee, cream. 

  10. For your coffee part, you are just brushing your coffee onto your cake

  11. Dust your tiramisu with cocoa powder and set in the fridge for a few hours until set!
