Low Carb Egg Rolls

 
 

Yields: 8 egg rolls 

Ingredients:

Egg Rolls - 

  • 8 A La Madre corn tortillas (discount code: lowcarblove)

  • 1 lb ground pork (or beef)

  • 1 tsp ground ginger

  • 1 tsp garlic powder 

  • 1 shallot, minced 

  • 1 cup shredded cabbage 

  • ½ cup shredded carrots 

  • 1 tbsp sesame oil 

  • Salt and pepper to taste 

  • Avocado oil for frying or airfrying 

  • 1 egg (for egg wash)

Sweet Chili Sauce - 

  • ½ cup water 

  • ¼ cup rice wine vinegar or white vinegar

  • 2 tbsp chili sambal 

  • ¼ cup  allulose sweetener 

  • 1 tbsp soy sauce or coconut aminos 

  • 1 tsp sesame oil 

  • ½ tsp xanthan gum (optional for thickness)

Directions:

  1. In a large mixing bowl, add all of your ingredients for your egg roll filling. 

  2. Warm up your tortillas by microwaving them in a damp paper towel for 15 seconds. This makes them pliable to work with.

  3. Add your filling in the middle, and roll. Seal your egg rolls with an egg wash. 

  4. Finish rolling your egg rolls, and air fry them at 375F for 10 minutes or deep fry them for 2 mins on each side, rotating them until the filling is cooked and the inside is crispy. 

  5. Next, add all your ingredients for your sweet chili sauce in a small saucepan. Heat on medium low heat until your sauce has thickened. 

  6. Dip your egg rolls with your sweet chili sauce and enjoy!
