Low Carb Crème Brûlée

Ingredients:
1 can full fat coconut milk
3 tbsp powdered sweetener
1 tsp vanilla extract or flavoring
4 egg yolks
3 tbsp granulated sweetener for the top
Directions:
Preheat your oven to 325F
In a saucepan, add your coconut milk and simmer on low heat. You do not want this to boil. Remove from heat and place on a heat safe board.
In a separate bowl, add your egg yolks and sweetener. You’ll want to whisk this until thoroughly mixed.
Making sure you don’t scramble your eggs, add your egg and sweetener mixture slowly into your milk, constantly stirring. Your custard should be a pale yellow and no scrambled eggs!
Fill up your ramekins with your custard about ⅔ of the way full and prepare your water bath. Boil about 3-4 cups of water or enough to fill up your pan about half way up.
Bake custards for 45 mins - an hour. They will have a slight jiggle still.
Place in the fridge for 2-3 hours until your custard has set. When you’re ready to serve, add about 1 tbsp granulated sweetener on top and place under the broiler until all caramelized. Enjoy!
