Low Carb Chicken Cobb Salad

Chicken:
Ingredients:
2 large chicken breasts
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
Avocado oil spray
Dressing:
Ingredients:
½ cup avocado or extra virgin olive oil
1 tbsp dijon mustard
4 tbsp balsamic vinegar
3 tbsp sugar free honey
1 tbsp lemon juice
2 garlic cloves, finely chopped
Salt and pepper
Toppings:
Ingredients:
6 cups shredded romaine lettuce
6 strips turkey bacon, chopped
4 boiled eggs
1 cup cherry tomatoes, sliced in half
1 cup sliced almonds
1 cup grilled onions
1 cup Roasted red peppers
1 cup feta cheese
Optional - roasted corn
Directions:
Season your chicken and airfry at 400F for 20 mins, flipping halfway through. Once cooked, set aside.
Cook your bacon, boil your eggs, and make everything for your toppings as your chicken is cooking.
In a large bowl or mason jar, add all of your ingredients for your dressing and mix.
Assemble your salad! Lettuce at the bottom, and all of your desired toppings on top.
Dress your salad with your balsamic vinaigrette and enjoy!
