Keto Pound Cake

Servings: 12

Pound Cake

Ingredients:

  • 11/2 cup of almond four sifted 

  • 6 tablespoons of protein powder 

  • 3.5 tablespoons of avocado oil

  • 1 1/2 teaspoon of baking powder 

  • 3 eggs

  • 6 tablespoons of sweetener

  • 3 tablespoon of non dairy milk 

  • 1 tablespoon of vanilla 

  • Pinch of salt

Directions:

  1. Preheat oven to 350 degrees Fahrenheit. 

  2. Prepare loaf pan with parchment paper and foil.

  3. Add all ingredients to a bowl and mix well.

  4. Pour batter into prepared pan.

  5. Bake for 25 to 30 minutes or until done.

Berry Compote:

ingredients:

  • 1 cup of mixed berries 

  • 1-2 tablespoons of sweetener

  • 1 teaspoon of lemon juice

Directions:

  1. Add all ingredients to a small pot. 

  2. Cook over medium-low heat, until it thickens.

  3. Allow to cool and add to your pound cake.
