Keto “Potato” Salad

 
 

Servings: 10

Ingredients:

  • 3 celery 

  • 1-2 head of cauliflower 

  • 5 boiled eggs 

  • ¼ cup of red onion

  • 1 cup of Mayo 

  • 1 large dill pickle 

  • 1 tablespoon of Dijon mustard 

  • ¼ cups olives 

  • 1 tablespoon of sour cream 

  • Salt and pepper to taste 

  • ½ tablespoon of sweetener 

  • Paprika and Cayenne pepper sprinkled on top 

Directions:

  1. Boil the cauliflower until al dente. 

  2. Hard boiled the eggs. 

  3. Run through a food processor or leave bigger chunks. 

  4. Add ingredients to a bowl and mix in with cauliflower. 

  5. Adjust the taste to salt and pepper.

  6. Enjoy!
