Pizza Casserole

Ingredients:
1lb Italian sausage
2 tablespoons olive oil, divided
1 large head of cauliflower, trimmed and cut into small, bite-sized florets
1/4 cup grated parmesan
Salt and pepper, to taste
1/4 cup black olives
1/4 cup sun-dried tomatoes packed in olive oil (drained)
15 to 20 pepperoni
½ cup mozzarella cheese
1 green pepper
Mushrooms
Homemade Pizza Sauce
Ingredients:
1 can 6 oz tomato paste
1- can 15 oz tomato sauce
1 tablespoon oregano
2.5 tablespoon Italian seasoning
½ cup water
¼ teaspoon red pepper flakes
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon freshly ground black pepper
1 teaspoon sweetener
Directions:
Preheat oven to 425
Prepare baking pan, with spray
Boil cauliflower bites for 8 minutes
Start cooking Italian sausage.
Until just done.
In a pot add sauce ingredients cook over medium heat until it boils and reduce hit and simmer for 5 to 10 minutes
Once cauliflower is done, drain
Remove sausage and sauté mushrooms
In a large bowl add the cauliflower, cooked Italian sausage, mushrooms, and green peppers. Toss together until well mixed.
Spread half of the mixture in the casserole dish. Top with half of pasta sauce, followed by half of the pepperonis and some of mozzarella cheese.
Repeat
Bake for 15 to 20 minutes
