Keto Microwavable 2 Layer Cake

Servings: 5

Cake:

Ingredients:

  • ½ cup of melted butter

  • 1 ½ cup of almond flour

  • 2 tablespoon baking powder

  • ½ cup of sweetener

  • 1 cup of liquid egg whites

  • 1 tablespoon of vanilla extract

Directions:

  1. Prepare a microwave safe bowl and add parchment paper and spray release

  2. Add all ingredients to the bowl and mix well

  3. Pour into microwave safe bowl and cook at 2 minutes at a time 

  4. Cook until done (it took us 3.5 minutes)

  5. Allow to cool remove from dish and ice

Whipped Cream Cheese

Ingredients:

  • 4 ounces of cream cheese

  • ⅓ cup of powdered sweetener

  • 1 teaspoon of vanilla extract

  • 1 ½ of heavy whipping cream

  • Strawberries

Directions:

  1. Add cream cheese and powdered sweetener and mix with paddle attachment

  2. Add heavy cream and vanilla extract

  3. Mix until stiff peaks form

  4. Ready to use

Chocolate Ganache

Ingredients:

  • 6 ounces of Choczero sugar free chocolate chips (discount code: lowcarblove)

  • ⅔ cup of heavy cream

Directions:

  1. Heat heavy whipping cream in a small saucepan

  2. Just until it begins to simmer

  3. Pour over chocolate chips

  4. Let sit for 2 to 5 minutes then stir until fully combined

  5. Set a side allow to cool 

  6. Cover with plastic wrap
