Keto Cauli-Mash and Gravy

Keto Cauli-Mash & Gravy Recipe:

Ingredients:

Cauli - Mash Recipe:

  • 1 large head of cauliflower

  • ¼ cup of unsalted butter

  • 3 tablespoons of sour cream

  • 2 teaspoons of garlic, minced (If you are using already minced garlic, use 1 tsp)

  • ¼ cup of parmesan cheese

  • Salt and pepper to taste

  • 1 tablespoon of heavy cream

Keto Chicken Gravy:

  • 1/2 cup Kettle & Fire chicken broth (Discount code: LOWCARBLOVE) - (If you want turkey gravy, use turkey broth)

  • 1 tbsp butter

  • 1/4 tsp xanthan gum

  • Salt and pepper to taste

Directions:

  1. Boil cauliflower until tender (about 10 mins)

  2. In a blender, add cauliflower, butter, sour cream, garlic, parmesan cheese, heavy cream and salt and pepper. Blend until pureed and smooth.

  3. Add the mashed potatoes into a saucepan and cook for an additional 5 mins so the flavors can meld together. Take off heat and transfer to serving bowl.

  4. In a separate pan, make your gravy.

  5. Melt your butter, then add xanthan gum. Mix

  6. Add your broth slowly and whisk until your gravy starts to thicken! Add salt and pepper to taste and you’re done! To avoid clumps, combine the butter and xanthan gum first and mix until thoroughly combined! Also, if it gets too thick, add more broth!
