Homemade Twix Bars
Yields: 10 bars
Ingredients:
Cookie:
2 cups almond flour
½ cup sweetener of choice
½ cup butter, softened
1 tsp vanilla
1 egg
Pinch of salt
Chewy Caramel: (adjust accordingly)
Chocolate coating:
2 cup Choczero dark chocolate chips
1 tbsp coconut oil
Directions:
Preheat your oven to 300F. In a large mixing bowl, add your cookie dry ingredients (almond flour, sweetener, salt, etc).
In a separate bowl, add your softened butter and whisk for 1-2 minutes. Add your room temperature egg and vanilla and whisk until combined.
Mix your wet and dry ingredients until a dough forms.
Line a baking dish with parchment paper and add your shortbread dough. Bake for 10-15 minutes until a toothpick comes out clean. Allow to cool.
In a saucepan, let’s make your chewy caramel. Add your maple syrup, and allulose and cook on a medium heat until combined (about 1-2 mins). Add your salt, butter and heavy cream and cook. It will reduce down and thicken. Remove from the heat and pour over your cooled cookie sheet.
Place in the fridge and set for 30 minutes.
Now, make your chocolate coating. Microwave your chocolate chips in 30 second increments, stirring between each increment. Add your butter or coconut oil.
Take your bars out of the fridge and cut them into your desired size. Coat with chocolate and place on a lined cookie sheet. Allow to set and enjoy!
