My Mom's Homemade Salsa

I love sharing my family recipes, so I wanted to share this with you to enjoy. This is a low carb dish, and makes a lot of salsa. You can use this on tacos, wings, chips, anything you want! This is a traditional salsa usually made in a molcajete, but I made it in a blender today.

My Mom's Homemade Mexican Salsa Recipe

Ingredients:

  • 5 jalapeños (If you want it more spicy, just use more!)

  • 4 roma tomatoes large

  • ¼ large onion

  • 2 garlic cloves (you can use more or omit if you want)

  • Salt to taste

  • 1/2 - 1 cup water (depending on the consistency you want)

Directions:

  1. Place a sheet of foil on your cast iron to make sure that your roasted veggies for easy clean up.

  2. Turn your stove on to medium high heat. Once it's hot, place your tomatoes, jalapeños, onion and garlic on the foil.You should hear it sizzling right away. Now, what you want to do is roast these on each side until black. I know it sounds crazy, but trust me when I say this does make a difference.

  3. Once it's roasted on one side, flip them. so they can roast on all the other sides. Garlic and onion will be done first, so you can remove those off the pan, then jalapeno and tomato. Remove and place on a plate to help cool.

  4. Once done, boil your water. Get your blender out, and add your garlic, salt and onion first. Blend well. Then add your jalapeno and blend. If you want chunks of jalapeno, just pulse it. Then, add your tomato and pulse a few times.

  5. Lastly, add your water to the end. It's time to taste! I added more salt, but of course make this to your liking.

  6. Serve with chips, on tacos, anything you want!
