Homemade Key Lime Pie

Crust
Ingredients:
3 tablespoons of softened butter
1 cup almond flour
1/3 cup granulated sweetener
½ teaspoon of vanilla extract
Filling
Ingredients:
28 oz of my sweetened condensed milk (recipe here) - double the recipe
1/2 cup light sour cream
3/4 cup key lime juice
zest from 2 regular limes
Whipped Cream
Ingredients:
1 cup heavy whipping cream
1/4 cup powdered sweetener
1 tablespoon vanilla extract
Directions:
Crust:
Preheat the oven to 350 degrees.
Melt the butter in the microwave
Add the almond flour, sweetener, and lemon zest, vanilla, mix until fully combined.
Press the dough evenly along the bottom and line the pan with parchment paper or foil first, then you can lift them easier.
Bake for 10 minutes.
Remove and cool while you make the filling
Filling:
Preheat oven to 350F
Whisk together sweetened condensed milk, sour cream, lime juice, and lime zest in a medium bowl. Pour into the prepared crust and bake for 10 minutes.
Let the pie cool slightly before chilling. Chill for at least 3 hours.
Whipped Cream:
Beat heavy cream, vanilla, and sugar together in a mixer until stiff peaks form.
Spread or pipe the whipped cream on top of the cooled pie. Top with additional lime zest if desired.
