Garlic Mashed “Potatoes” and Gravy

 
 

Servings: 12

Ingredients:

  • 1 ½ lbs small turnips, peeled and cut into chunks

  • 2 cups water

  • Pinch salt 

  • 3 tablespoon almond milk or heavy cream 

  • 2 tablespoons of ghee

  • 1 teaspoon sweetener 

  • Salt and pepper to taste

  • 6 garlic cloves 

  • 1 teaspoon avocado or olive oil 

  • ½ teaspoon salt for garlic 

    Gravy:

  • 2 tablespoon butter or butter substitute for dairy-free

  • 1 cup Vegetable or chicken Broth 

  • ½ teaspoon garlic powder

  • ½ teaspoon xanthan gum

  • salt and black pepper to taste

Directions:

  1. Boil turnips in a pot with salted water until tender. Drain excess water, set aside.

  2. Place garlic cloves on a sheet of foil. Drizzle with oil and sprinkle with salt.

  3. Wrap the seasoned garlic cloves in the foil and bake at 400 degrees F for 20-25 minutes until soft.

  4. Pop the hot turnips, butter, sweetener, almond milk, garlic into a food processor and pulse until creamy and smooth.

  5. Make gravy in pan heat butter, once melted add in broth, garlic, and xanthan. Bring to a simmer and it has thickened.
