Garlic Mashed “Potatoes” and Gravy

Ingredients:
1 ½ lbs small turnips, peeled and cut into chunks
2 cups water
Pinch salt
3 tablespoon almond milk or heavy cream
2 tablespoons of ghee
1 teaspoon sweetener
Salt and pepper to taste
6 garlic cloves
1 teaspoon avocado or olive oil
½ teaspoon salt for garlic
Gravy:
2 tablespoon butter or butter substitute for dairy-free
1 cup Vegetable or chicken Broth
½ teaspoon garlic powder
½ teaspoon xanthan gum
salt and black pepper to taste
Directions:
Boil turnips in a pot with salted water until tender. Drain excess water, set aside.
Place garlic cloves on a sheet of foil. Drizzle with oil and sprinkle with salt.
Wrap the seasoned garlic cloves in the foil and bake at 400 degrees F for 20-25 minutes until soft.
Pop the hot turnips, butter, sweetener, almond milk, garlic into a food processor and pulse until creamy and smooth.
Make gravy in pan heat butter, once melted add in broth, garlic, and xanthan. Bring to a simmer and it has thickened.
