Chocolate Crinkle Cookies
Ingredients:
1 1/4 cup superfine blanched almond flour
1/2 cup cocoa powder
1 tsp instant coffee
1 tsp baking powder
1/4 tsp xanthan gum
Pinch of salt
3/4 cup Truvia Sweet Complete Granulated All-Purpose Sweetener
2 large eggs, room temp
1/4 cup avocado oil
1 tbsp vanilla extract
For Rolling:
1/4 cup Truvia Sweet Complete Granulated All-Purpose Sweetener
3/4 cup Truvia Sweet Complete Confectioners Sweetener
Directions:
In a medium mixing bowl, whisk together almond flour, sweetener, cocoa powder, baking powder, xanthan gum, instant coffee and salt, set aside.
Now, add the eggs and vanilla and beat for 1 minute.
Form the dough into a ball. Your dough should be tacky.
Preheat oven to 350 degrees then line a large baking sheet with parchment paper.
Place Truvia Sweet Complete Granulated and Confectioners Sweeteners in separate small bowls.
Scoop and shape into 1-inch balls. Roll into Truvia Sweet Complete Granulated Sweetener, then generously into the Truvia Sweet Complete Confectioners Sweetener.
Bake for 8-10 mins until a crust has formed but center is still gooey, let it cool for 10 mins and enjoy!
