Chocolate Crinkle Cookies

 
 

Ingredients:

  • 1 1/4 cup superfine blanched almond flour

  • 1/2 cup cocoa powder

  • 1 tsp instant coffee 

  • 1 tsp baking powder

  • 1/4 tsp xanthan gum 

  • Pinch of salt

  • 3/4 cup Truvia Sweet Complete Granulated All-Purpose Sweetener

  • 2 large eggs, room temp

  • 1/4 cup avocado oil

  • 1 tbsp vanilla extract 

For Rolling:

  • 1/4 cup Truvia Sweet Complete Granulated All-Purpose Sweetener

  • 3/4 cup Truvia Sweet Complete Confectioners Sweetener

Directions:

  1. In a medium mixing bowl, whisk together almond flour, sweetener, cocoa powder, baking powder, xanthan gum, instant coffee and salt, set aside.

  2. Now,  add the eggs and vanilla and beat for 1 minute.

  3. Form the dough into a ball. Your dough should be tacky.

  4. Preheat oven to 350 degrees then line a large baking sheet with parchment paper.

  5. Place Truvia Sweet Complete Granulated and Confectioners Sweeteners in separate small bowls.

  6. Scoop and shape into 1-inch balls. Roll into Truvia Sweet Complete Granulated Sweetener, then generously into the Truvia Sweet Complete Confectioners Sweetener.

  7. Bake for 8-10 mins until a crust has formed but center is still gooey, let it cool for 10 mins and enjoy!
