Chicken Omelette

 
 

Ingredients:

  • 2 eggs

  • ¼ cup shredded rotisserie chicken

  • 2 tbsp bell peppers

  • 2 tbsp onion, diced

  • ½ roma tomato, diced

  • Salt and pepper to taste

  • Avocado oil 

  • Garnish - ½ avocado

Directions:

  1. In a medium skillet, add avocado oil, onions, bell peppers and tomato into the pan.

  2. Saute until soft, add your chicken and saute until golden brown. 

  3. Add your scrambled eggs, and cook for about 1-2 mins on each side. Flip once the first side is done! 

  4. Serve with a homemade salsa, avocado or top with cheese.
