Carne Asada Fries

Ingredients:
Fries -
2 zucchinis, cut into fries
Avocado oil spray
2 eggs
½ cup almond flour
½ cup parmesan cheese
Salt and pepper to taste
Carne asada -
1 lb carne asada steak (skirt or flank steak)
1 jalapeno, deseeded and finely chopped
½ bunch cilantro, finely chopped
1 juice lemon
1 juice lime
2 tbsp apple cider vinegar
2 tbsp coconut aminos
3 garlic cloves, finely minced
2 tbsp avocado oil
½ tsp cumin
½ tsp chili powder
1 tsp salt
½ tsp pepper
Toppings -
Pico de gallo or diced tomatoes
Sour cream
Mexican blend cheese
Guacamole
Cilantro
Diced onion
Directions:
Marinate your skirt steak with all of your ingredients and allow to sit for 30 mins, the longer the better. You can also do this step first if you’d like.
Cut your zucchini into fry sizes and place in a large mixing bowl. Crack two eggs and season with salt and pepper.
Make your breading by adding almond flour, parmesan cheese, salt and pepper into a bowl. Add this breading into your coated zucchini and toss.
Bake your zucchini fries by baking at 375F for 15-20 minutes or airfry at 400F for 10 minutes.
Cook or grill your steak to your desired doneness on a large saute pan or grill. I cooked mine for about 2 mins on each side.
Remove your steak, and let it sit for 5 minutes. Slice at an angle.
Take your fries out of the oven, and assemble fries with your favorite toppings! Enjoy!
