Buffalo Chicken Taquitos

 
 

Ingredients:

  • 12 low carb tortillas (I used - Alamadre - discount code: lowcarblove)

  • 2 cups shredded chicken breast

  • 3 tbsp cream cheese, softened 

  • 3 tbsp buffalo sauce 

  • 1 cup Mexican blend cheese (additional cheese for wrapping)

Toppings:

  • Shredded lettuce

  • Diced tomatoes 

  • Diced onion

  • Cilantro 

  • Sour cream

  • Buffalo sauce 

Directions:

  1. Add all of the ingredients, except for the tortillas, into a bowl and mix.

  2. Add 2 tbsps of the mixture into your tortilla and roll. You can add more if you’d like. Roll your taquitos and pin with a toothpick to hold in place. If you don’t have toothpicks, just use the mixture as the glue for your taquitos!

  3. Add avocado oil to a pan on medium-high heat.

  4. Add your taquitos into the pan and fry for 2-3 minutes on each side. You want them to be crispy on all sides

  5. Add to a plate lined with a paper towel and serve! You can top with lettuce, tomatoes, onion, etc!
