Buffalo Chicken Taquitos
Ingredients:
12 low carb tortillas (I used - Alamadre - discount code: lowcarblove)
2 cups shredded chicken breast
3 tbsp cream cheese, softened
3 tbsp buffalo sauce
1 cup Mexican blend cheese (additional cheese for wrapping)
Toppings:
Shredded lettuce
Diced tomatoes
Diced onion
Cilantro
Sour cream
Buffalo sauce
Directions:
Add all of the ingredients, except for the tortillas, into a bowl and mix.
Add 2 tbsps of the mixture into your tortilla and roll. You can add more if you’d like. Roll your taquitos and pin with a toothpick to hold in place. If you don’t have toothpicks, just use the mixture as the glue for your taquitos!
Add avocado oil to a pan on medium-high heat.
Add your taquitos into the pan and fry for 2-3 minutes on each side. You want them to be crispy on all sides
Add to a plate lined with a paper towel and serve! You can top with lettuce, tomatoes, onion, etc!
