Broccoli Cheddar Soup

 
 

Ingredients:

  • 2 tbsp butter

  • 2 cups broccoli florets

  • ½ large carrot, shredded

  • 1 stalk celery

  • 3 cups shredded cheddar cheese

  • 32 oz Kettle and Fire chicken broth (discount code: lowcarblove)

  • ¼ cup heavy cream

  • 1 tsp xanthan gum (more for thickness)

  • ¼ diced onion

  • Salt and pepper to taste

Directions:

  1. In a stockpot, add your butter, onion, celery and carrots and cook until tender

  2. Now, add your broccoli and saute for 2-3 minutes

  3. Add your chicken broth, heavy cream and cook on a medium low heat. You can let it simmer for 5-10 minutes. The xanthan gum should start thickening right away.

  4. Season with salt and pepper to taste and enjoy!
