Broccoli Cheddar Soup
Ingredients:
2 tbsp butter
2 cups broccoli florets
½ large carrot, shredded
1 stalk celery
3 cups shredded cheddar cheese
32 oz Kettle and Fire chicken broth (discount code: lowcarblove)
¼ cup heavy cream
1 tsp xanthan gum (more for thickness)
¼ diced onion
Salt and pepper to taste
Directions:
In a stockpot, add your butter, onion, celery and carrots and cook until tender
Now, add your broccoli and saute for 2-3 minutes
Add your chicken broth, heavy cream and cook on a medium low heat. You can let it simmer for 5-10 minutes. The xanthan gum should start thickening right away.
Season with salt and pepper to taste and enjoy!
