Baked "Potato" Salad

 
 

Servings: 6

Ingredients:

  • 2 turnips

  • ¼ cup mayo

  • 2 tbsp yellow mustard 

  • ¼ cup parmesan cheese 

  • ½ cup cheddar cheese 

  • 2 stalks green onion

  • 4-5 strips bacon 

  • 2 tbsp sour cream 

  • 1 tsp garlic powder 

  • ½ tsp onion powder 

  • ½ tsp paprika 

  • 1 tsp sweetener 

  • Salt and pepper to taste

Directions:

  1. Peel and dice your turnips into cubes.

  2. In a large stockpot, add about 5-6 cups of water and boil your turnips for 8-10 minutes until fork tender.

  3. Fry your bacon and dice. Set aside. 

  4. Strain your turnips and allow them to cool.

  5. While your turnips are cooling, make your dressing by adding all of your ingredients besides your shredded cheddar cheese, green onion, bacon and sour cream.

  6. Add your dressing to your potato salad and mix. I also added half of my bacon into my potato salad at this time.

  7. Top with your cheddar cheese, bacon, green onion and sour cream and enjoy! Store in the fridge until you’re ready to serve.
