Baked Eggs

Servings: 2

Baked Eggs

Ingredients:

  • 4 eggs 

  • 1 cup broccoli, chopped 

  • ⅓ onion, diced 

  • ½ red bell pepper, diced 

  • ¼ cup sun dried tomatoes, chopped 

  • 1 jalapeño, diced 

  • ½ cup spinach

  • ¼ cup grated Parmesan cheese 

  • Salt and pepper to taste 

  • Sprinkle - red chili flakes

Directions:

  1. Preheat your oven to 350F. 

  2. In a saute pan, add avocado oil, and heat on a medium high heat.

  3. Add your onion, broccoli, jalapeno and red bell pepper 

  4. Add your spinach and sun dried tomatoes 

  5. Season with salt and pepper 

  6. Top with parmesan cheese and crushed red pepper

  7. Bake for 5-10 mins depending on how runny you want your egg yolks.

  8. Serve immediately!
