Taco Bell Mexican Pizza Copycat

Servings: 6

Dough:

Ingredients:

  • 6 tablespoons of almond flour

  • 2 tablespoons of coconut flour

  • 1/2 teaspoon xanthan gum

  • ¼ teaspoon of chicken bouillon

  • 1/2 teaspoon baking powder

  • ¼ teaspoon kosher salt

  • 25 grams of egg white, lightly beaten

  • ¼ teaspoon lime juice

  • 1 to 2 tablespoons lukewarm water

Meat:

Ingredients:

  • 1lb of ground beef

  • ¼ teaspoon of cumin 

  • ½ teaspoon of garlic powder

  • ½ teaspoon of onion powder

  • 1 teaspoon of paprika powder

  • ¼ teaspoon of pepper powder

  • ¼ teaspoon of cayenne pepper

  • ½ teaspoon of oregano

  • 2 tablespoon of taco sauce (optional)

  • ¼ cup of shredded cheese plus more for topping 

  • Dash of salt

Toppings:

  • low carb beans 

  • ¼ cup chopped tomatoes

  • sour cream

  • green onions

Directions:

  1. Mix all dough ingredients together, except the water.

  2. Slowly add in water, kneading and mix until desired dough consistency.

  3. Wrap and chill dough for 10 minutes.

  4. Add ground beef to a skillet.

  5. Add seasonings and taco sauce.

  6. Once cook set aside.

  7. Roll out your tortilla dough into a round disc.

  8. Fry in avocado oil until crispy on each side.

  9. Spread beans on one fried tortilla, add meat, add a second fried tortilla, add marinara, add cheese, add tomatoes.

  10. Top it off with some sour cream and green onions and enjoy!
