Stuffed Ravioli

Ingredients:
Pasta:
2 cups low moisture mozzarella cheese
4 egg yolks, room temperature
½ tsp xanthan gum
Stuffing:
Meat:
1 lb ground beef
¼ white onion, finely diced
2 garlic cloves, finely minced
2 tbsp tomato paste
Salt and pepper to taste
Ricotta:
1 cup ricotta cheese
1 egg
1 cup meat mixture
Sauce:
1 cup marinara sauce
Rest of meat mixture
Parmesan cheese
Basil for garnish
Directions:
In a large bowl, add your cheese and melt in 30 second increments until fully melted. You don’t want this to be boiling hot, heat until your cheese is melted only.
Add your egg yolk and process. At the end, sprinkle in your xanthan gum. You won’t be able to taste this, but it adds to the texture of the noodles.
Knead your dough for a few minutes and roll out thin. You can cut your pasta now, or wait.
Allow your pasta to dry out for 1-2 hours in the fridge.
Make your filling - in a sauté pan, cook your ground beef. Add your onion, garlic, tomato paste, and seasonings and cook.
Allow your ground beef mixture to cool slightly before adding your ricotta.
Roll out your pasta dough and cut into squares. Add your filling and secure each piece by pressing down with a fork.
Airfry for 5-8 minutes at 400F. Top with sauce, extra parmesan cheese, basil and enjoy!
