Starbucks Cranberry Bliss Bars

Servings: 12 bars 

Ingredients:

Bars:

  • ½ cup unsalted butter, softened

  • ⅔ cup powdered sweetener 

  • 1 tsp molasses 

  • 2 cups almond flour 

  • 1 egg, room temperature

  • 1 tsp vanilla extract

  • ½ tsp xanthan gum

  • ½ tsp baking soda

  • ¼ tsp salt

  • ⅓ cup Choczero sugar free white chocolate chips  

  • ¼ cup sugar free dried cranberries

  • Pinch of salt

Frosting:

  • 8 oz cream cheese, softened

  • ⅓ cup powdered sweetener

  • ½ tsp vanilla extract

  • 1 tbsp almond milk

  • 1 tsp lemon juice

Garnish and Drizzle:

  • Sugar free dried cranberries 

  • Melted Choczero sugar free white chocolate chips 

Directions: 

  1. Preheat your oven to 325F.

  2. In a large mixing bowl, cream your butter, sweetener and molasses until combined. Add your egg and vanilla extract and  whip until combined.

  3. In a separate bowl, add your dry ingredients and mix. Combine your wet ingredients and dry ingredients, mixing until thoroughly combined. Fold in your white chocolate chips and cranberries. 

  4. Line a baking sheet with parchment paper and add your batter, spreading it about ½ in thick.

  5. Bake for 17-20 mins until your bars come out clean with a toothpick. 

  6. Let’s make your frosting, in a large bowl, whip your cream cheese, sweetener, vanilla together. Add your almond milk and lemon juice and whip until combined.

  7. Remove your bars and allow to cool completely before adding your frosting.

  8. Top with a white chocolate drizzle and more sugar free cranberries.
