Easy Pickled Onions

Servings: 6

Ingredients:

  • 3 red onions (I used 1 large, and 2 small)

  • 2 tbsp apple cider vinegar

  • 4 lemons juiced

  • 1 tsp dried oregano

  • 1 tsp salt

Directions:

  1. Slice your onions thinly, and add these to a large bowl.

  2. Then, add your lemon juice from your 4 lemons, apple cider vinegar, oregano and salt.

  3. Mix, and taste. At this point, if you need to adjust your salt or add more oregano, do so now.

  4. Set aside for 15-20 mins, your onions will be soft and start pickling.

  5. For best results, put in the fridge for 2-3 hours, however you can eat them after 20 mins. Enjoy with a cheese shell taco, on top on a skillet, etc!
