Panda Orange Chicken Copycat

Yields: 6

Ingredients:

  • 1 lb boneless chicken breast or thigh chopped 

  • 2 eggs whisked 

  • ½ cup protein powder 

  • ½ teaspoon salt 

  • ½ teaspoon pepper 

    Sauce: 

  • ¾ cup sweetener 

  • ½ teaspoon molasses 

  • ¼ cup rice vinegar 

  • 3 tablespoon soy sauce

  • ¼ teaspoon sesame oil 

  • ¼ cup water 

  • ¼ teaspoon ground ginger 

  • ½ teaspoon garlic powder 

  • ½ teaspoon red pepper flakes

  • 1 teaspoon orange zest 

  • 1 teaspoon orange extract (optional) 

  • ¼ teaspoon xantham gum 

  • ½ cup avocado oil for frying 

    Rice:

  • 1 bag cauliflower rice

  • 2 tablespoon soy sauce 

  • 1 large egg 

  • ½ teaspoon sesame oil 

  • 1 teaspoon garlic powder 

  • 1 teaspoon onion powder 

Directions:

  1. Mix the protein powder with the salt and pepper and set aside. 

  2. Whisk eggs and set aside. 

  3. Heat oil. 

  4. Dip chicken pieces in eggs and then into protein powder and fry. 

  5. Mix sauce in a bowl 

  6. Once the chicken is cooked, set aside. 

  7. Add sauce and cook to thicken 

  8. Toss cooked chicken and enjoy!
