Million Dollar Chicken Bake

Servings: 4

Ingredients:

  • 1 lb raw chicken breast or rotisserie, diced

    • IF RAW, cook for 40 mins, if using cooked chicken, only cook for 15 min 

  • 6 ounces lite cream cheese, softened

  • 1/3 cup avocado mayonnaise

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 cup Colby jack or Mexican blend cheese, shredded

  • 6 strips of bacon, cooked and diced 

  • Green onion to top

Directions:

  1. Preheat oven to 350F.

  2. Combine the chicken, cream cheese, mayo, and chicken broth in a large bowl and mix completely.

  3. Transfer to a casserole dish and top with shredded cheese and crumbled bacon.

  4. Bake uncovered for 40 minutes or until the edges are bubbling and the cheese is melted and starting to brown.

  5. Garnish with green onions and serve warm!
