Mexican Chopped Salad

Salad

Ingredients:

  • 1 small head romaine lettuce chopped or about 3 cups of romaine lettuce prechopped

  • ½ cup cherry or grape tomatoes

  • 1 cucumber, chopped

  • 1/2 red bell pepper, chopped

  • 1 avocado 

  • 2 small radishes, sliced  

  • 1/4 cup red onions, chopped

Cilantro Jalapeno Dressing

Ingredients:

  • 1 lime, juiced

  • 1 jalapeno, deseeded

  • 1 bunch cilantro

  • 1 garlic clove

  • 1 tsp Choczero maple syrup (discount code: lowcarblove)

  • ¼ cup extra virgin olive oil 

  • ½ tsp salt

  • ¼ tsp pepper

Directions:

  1. In a blender or medium sized mixing bowl, add all of your ingredients for your dressing and blend. 

  2. Assemble your salad and add your dressing on top. Toss and enjoy!

  3. Store extra dressing in the fridge.
