Mediterranean Salmon Salad

Servings: 2

Ingredients:

Salmon:

  • 1 large salmon filet 

  • Salt and pepper to taste 

  • 1 lemon

 Dressing:

  • ½ cup olive or avocado oil

  • 3 tbsp red wine vinegar

  • 1 tsp dijon mustard

  • 1 tbsp lemon juice

  • Salt and pepper to taste

  • 2 garlic cloves, finely minced

  • 1 tsp italian seasoning or oregano

Assembly:

  • Romaine lettuce, chopped

  • Diced cucumbers

  • Diced tomatoes

  • Feta cheese

  • Black or green olives 

  • Sliced red onion 

Directions:

  1. In a small bowl, add in all of your ingredients for your dressing and whisk. Set aside.

  2. Season your salmon with salt and pepper. Pan sear your salmon by adding avocado oil in a saute pan. 

  3. Cook your salmon skin side down for 3-4 minutes, flip and cook until your desired doneness. 

  4. In a large salad bowl, assemble your salad with all of your toppings. Add your lettuce, cucumbers, tomatoes, etc. Top with salmon, add your dressing and enjoy!
