Korean Beef Meal Prep

Servings: 4

Ingredients:

  • 2 bags, cauliflower rice

  • 1 lb ground beef

  • 1 tsp garlic powder

  • 1 tsp ginger powder 

  • Salt and pepper to taste

  • 2 tbsp soy sauce 

  • 1 tbsp Choczero sugar free honey 

  • 1 tsp sesame oil 

  • 2 sprigs green onion 

  • 2 large broccoli florets or 1-16oz bag

  • Sesame seeds 

  • Top with sriracha 

Directions:

  1. In a large saucepan, add your ground beef and cook until fully cooked through. Add your salt, pepper, garlic and onion powder, soy sauce and sweetener of choice. Add your green onions to top!

  2. Steam your broccoli.

  3. Cook your cauliflower rice. I cut a corner of my bag, microwave for 4 mins, drain out all the liquid and then cook on medium heat with 1 tbsp avocado oil until nice and fluffy. Season with salt and pepper. 

  4. Assemble your meal prep containers. I had 3 sections - rice, broccoli, and Korean BBQ beef! Top with sesame seeds & sriracha and enjoy!
