Keto Tres Leches Cake
This cake took me about a month to perfect, and I cannot wait for you to try it! Growing up as a Mexican American, we always had a ton of desserts around and this one was one of my favorites. It's moist, flavorful and delicious. There are many variations of this cake, so of course you can modify it which ever way you want!
Keto Tres Leches Cake Recipe
Serving Size: 10-12
Ingredients:
Keto Vanilla Cake -
6 tbsp Butter (softened)
4 large Eggs
1/4 cup Unsweetened almond milk
3/4 cup granular or powdered sweetener
1 tbsp vanilla bean paste or vanilla flavor
1/4 cup superfine coconut flour
1 1/2 cup superfine almond flour
1 tbsp baking powder
Optional: 1/4 tsp salt
Tres Leches (3 Milks):
1 cup of my condensed milk
¼ cup heavy cream
¼ cup almond milk
My Homemade Whipped Cream:
1/2 cups Heavy cream
2 tbsp powdered sweetener (https://amzn.to/3hy8sD0)
1 tsp Vanilla flavor
Directions:
Start on your condensed milk:
Preheat oven to 350 degrees
In a mixing bowl, whip your butter until fluffy. Add your sweetener, and beat until combined. It should look like whipped butter at this point!
Add eggs, almond milk and vanilla bean paste/flavor or extract
Add in the almond flour, coconut flour, and baking powder.
At this point, your batter should look nice and smooth. Add batter into pan and flatten. Bake for 20-30 minutes, until the cake comes out clean with a knife. The cake should be golden and moist.
While your cake is baking, make your milk mixture.
Mix your almond milk, heavy cream and condensed milk
Using a toothpick or fork, poke holes in top of the cake (making sure you hit the bottom of the cake) and pour milk mixture over the top.
Let cake cool down and refrigerate for 2-3 hours.
When you're ready to serve, make your whipped cream by beating your heavy cream, powdered sweetener and vanilla.
Spread the whipped cream on top, add your fruit of choice and serve.
